Almondine are a family run patisserie specialising in handmade macarons, French style patisserie and afternoon tea. Eclairs have always been a favourite of Jenny’s. These lemon meringue eclairs are a classic flavour combination but aren’t overly sweet. They are simple to make and are the perfect afternoon tea indulgence!
What you’ll need:
Choux Pastry
- 125ml milk
- 125ml water
- 130g unsalted butter
- 10g caster sugar
- 160g plain flour
- 2g salt
- 250g egg
Lemon Cream
- Zest of 3 lemons
- 200g caster sugar
- 200g egg
- 140g lemon juice
- 385g unsalted butter
Italian Meringue
- 90g egg white
- 180g caster sugar
- 50g water
